Many years in 5 star hotels and luxury retreats. I received the first chefs hat at Peppers Spicers peak lodge in 2008 doing daily 7 course wine matched degustation menus. I worked in Dubai, Canada and the USA working in many areas from alacarte to banquets, gaining experience from many different cultures and styles.
