Experience
Chef Mattia Maria Rossi takes his first steps in restaurants between Ostia (where he comes from) and Fiumicino, working closely with young and motivated Chefs such as Marco Claroni, from the “Osteria dell'Orologio”, where he is lucky enough to learn the processing of countless fish dishes or the “Peccato Originale”, where he deepens the bread-making at his best. Continuing in the “Settembrini restaurant”, in the center of Rome, where the working collaboration with Chef Luigi Nastri takes place. Ready to open up to new horizons, Mattia goes to London curious to refine and discover new techniques, finding in the “l’Atelier de Joel Robuchon” (** Michelin stars) a perfect balance between innovative techniques and respect for classicism. Back in Rome, Mattia is lucky enough to work closely with Cristina Bowerman, in the “Glass restaurant” (* Michelin star). His experience continues overseas, more precisely in Australia, where he worked for two years in Sydney at the court of Chef Alessandro Pavoni and Chef Victor Moya first in the restaurant “Ormeggio at the Spit” (2 Capelli), then as Head Chef at the restaurant “Kiosk by Ormeggio”. Mooring and concludes his Australian experience, after 6 years, becoming owner and Head Chef of the “Sottosopr restaurant (1 Capello). After the birth of his son Romeo Maria, he decides to return to Rome and bring all his culinary baggage into your homes.
