Experience
While starting my apprenticeship as “First Chef” and “Pizzaiolo” in several hotel and restaurants in Rome from 1982 to 1987, I was appointed Main Chef of “Pizzeria Section” at the renowned “Da Michele“ restaurant in Rome, where I have been working from 1987 to 2000.
By the same time I attended several special courses, getting high qualification certificates as Food & Beverage Manager and Conference & Event Manager.
In 1999 I joined the vocational Institute “Pellegrino Artusi” as “Culinary Art Teacher”.
Soon after I was given the task as Teacher in other professional schools in Rome, coming back to P. Artusi Institute in Sept. 2006, as Responsible Head of technical equipment Division.
I have also got the Second Level Degree of High Cuisine at “Etoile Int’l School” in Rome.
During the last then years I spent several time abroad, as Technical Consultant for the organization of “Typical Italian Restaurants”, with particular care of start-up operations, staff recruitment and training.
