I have 30 years of experience in the culinary industry and I obtained my degree in Food Science at the London Metropolitan University. In all those years in England and Brazil, I have worked for 5* establishments as well as catering at the highest level for all sorts of customers. I tend to cook earthy food, no frills, only real cooking, real flavours, usually pairing with the most suitable wines. Since I have worked in many different places around the world, I am aware of quality ingredients and how to combine different cultures in one dish.
