For me, working with small Quebec farmers is a matter of principle. This approach allows her to limit her environmental footprint while offering internationally-inspired, seasonal menus made with great quality products.

Having travelled across Canada as a manager in the not-so-sustainable and rather industrial restaurant industry, Maurín discovered the magnificent public markets of Montreal and the amazing local farms of the region soon after she arrived here in 2012.
