Inherently my style is Italian. Being brought up in an Italian house with classics made for me by my mother or grandmother you would never hear finish your food it was most likely Justin, you have had enough. Training in classic French cuisine opened my eyes to a world of flavors and techniques and also travelling to Asia and Thailand has been a catalyst for my thirst for culinary adventures. Ultimately what motivates me the most is not what I get out of it, but what positive and pleasurable experiences I can bring to someones evening.

Since I could walk I had the urge consciously or not, to help in the kitchen. After attending University I came to the realization that cooking was a passion of mine and decided to make a career out of it. While attending George Brown I was already working in a professional kitchen. Having the privilege to work for and among st the top chefs in the city in some of the finest Restaurants Toronto has to offer I quickly excelled in all the traditional stations of a brigade kitchen. Crush Wine Bar, Bymark, Scarpetta, Royal Canadian Yacht Club to name a few.
