Cooking style
BajaMed is my cooking style and is composed of three influences:
· Mexican Cuisine: Authentic Mexican flavors with their variants that converge in this dynamic and multicultural border, inhabited by people from all parts of the Republic and who have contributed ingredients such as dried chiles, pastas, tortillas, marinades, moles, sauces.
· The Mediterranean Cuisine: Thanks to the Mediterranean climate Baja California produces about 95% of the Mexican wine from the Guadalupe Valley, as well as olives, vegetables, cheeses and olive oil.
· The Oriental Cuisine: Flavors from Chinese communities that settled in the Valley of Mexicali for more than 120 years, after the gold rush and the construction of the railroad in the United States, which today form an essential part of the Baja California identity .
The BajaMed kitchen is a trend within Baja California cuisine.
