His creative cooking, modesty and rigour have been qualities that Walter has brought into his own style of cooking blend classic French fare with a delicate approach to flavour and texture derived from his Japanese heritage – his dishes feature bold, simple flavours cooked using only the very finest ingredients.

After over 20 years of experience in the luxury hospitality worldwide Chef Walter decided in 2018 to share his cuisine and services directly to your tables. Chef Walter’s father travelled from Japan to Lyon in the 1960’s, to learn the art of French cooking – he remains to this day one of his biggest inspirations. Walter had the opportunity to work at some of France’s and London's most famous 3 Michelin stars restaurants ( Paul Bocuse, Ritz Paris, The Connaught London...)
