Cooking style
I've worked with many types of cuisine, mostly western European, Asian, Latin-American, and classic American. I draw flavor combinations from many different cultures and like to put a personal twist on many classic dishes. I love my sous vide, and have a lot of fun with spherification and foams.
Experience
I've cooked many different types of cuisines in my 10 years in the culinary industry, six of those years I spent working in Seattle. I strive for scratch cooking, with little to no waste, using sustainable ingredients. I have experience with caterings ranging large to small, including cocktail parties, private dinners, wedding receptions and large outdoor BBQ's. I will be moving to Denver this summer in July.
