I enjoy comfort food with traditional cooking base, the old school cooking style with traditionally flavors. However I also like to play with not so common flavor and texture.

I grow up in Bordeaux France, where I went to culinary school. Working in the hospitality industry gave me the opportunity to travel while learning different cooking culture. I have had the privilege to work under some talented chef such as Raymond Blanc, Le Manoir aux Qua't Saison in Oxford, Daniel Boulud, Daniel in NY, Anthony Bourdain, Brasserie les Halles in NY. I have been in Florida for about 4 years, and enjoy very much working with local, exotic product, as well as cooking traditional European cuisine.
