Cooking style
Classic trained in French and Italian Cuisine, I lived in Hawaii since 1991 creating an array of cooking styles combining old world techniques with local Hawaiian and Asian products. I take pride in using as much as possible local sourced products, working with over 75 farmers in Oahu, Big Island and Maui. Only the freshest of the products makes it on the tables of my customers.
Experience
Originally from Milan, Italy, I started my culinary experience in London as apprentice, returned to Milan, I worked in the fashion quarter, Montenapoleone during winter season and in Porto Rafael, Sardinia during summer season. I moved to Maui in 1991 where I was the executive chef of the most prestigious restaurant on Island. here I served all the celebrities from Hollywood, sport figures and political. the chef of the stars. I moved to Big Island where I worked at the Four Seasons Hualalai along with chef Massimo Falsini, A Michelin star awarded chef. Now I'm in Oahu, creating delightful dinners for my customers.
