Cooking style
I call my style Florida Georgia. I blend Cuban, Southern, Haitian and Mexican techniques. I am classically trained with European heritage, so I also have some great German, Mediterranean, French and UK recipes. My food is simple, authentic and full of flavor. Growing up in Lake Worth and being born in Atlanta I try to make dishes my friends and family would want to eat, dishes like ropa vieja, paella, fried pork chops, collard greens and authentic Cuban style yellow rice. My menus are cost-effective.
Experience
I started cooking at the Publix deli, making fried chicken, fish, hot and cold sandwiches and sides. They even let me do my own mojo pork recipe. I then detoured into sales before going to culinary school and getting my bachelor's degree. I worked part time during school and started a Catering company with my wife and mother. I currently cook full time at Maggiano's little Italy and cater on the side. I am looking to open my own restaurant within the next year, so I have a selection of items that have been hits at weddings, parties and church functions I have been blessed to cook for. I am Serve Safe certified food for and Alcohol safety and can also serve as a bartender for events.
