I always try to be very natural and simple. The less manipulated is the product the best. Peruvian food has been influenced by a lot of cultures in the last 500 years, the most representatives ones being Japanese, Chinese, Italian, African, etc. I can bring all those influences into the dishes I serve.

I started very young in the culinary industry; at the age of 16. It all began in an Italian franchise located in Coral Springs FL. Most recently, for the last 7 years, I have been doing Peruvian food in the area of brickell/downtown Miami. My actual job is located at the Mandarin Oriental in a restaurant named La Mar (by Gaston Acurio) where we served one of the best (just not to say the best) peruvian food in town not only because of flavors but technique wise. My current position is chief of party, who is in charge of the kitchen while chef and/or sous chef are not around.
