Cooking style
Healthy, very flavorful, seasonal. I especially enjoy cooking with wood fire. I use various techniques to coax the most flavour and give food depth and layers of deliciousness. Sourcing ingredients is of the atmost importance which is why I always reattach and get the best ingredients available. Best means fresh, seasonal, local, artisanal, grown or raised in a sustainable humane manor and having a personal relationship with the farmer, baker, butcher ect.
Experience
I've been cooking almost all my life. Professionally for nearly 20 years. I worked in NY, and all over Northern CA. My original passion was Asian food. Itraveld to Thailand and learned there. Then I learned more classic/french technique. I feel in love with Peruvian food and traveled there to learn. My mom's side of the family is Mexican and so I love and am well versed in that diverse Cuisine as well.
