Hi, my name is the Valeriano but everyone calls me Vale.
I'm from Italy, born in the south and grew up near Florence.
I was born in a family that always owned restaurants in the different parts of Italy and that's where I started working and learning, at first as a server and then as cook and Chef.
I moved to New Orleans in 2014 and worked in one of the best restaurants in town.
I started as a line cook at Domenica restaurant in 2014 then moved as a Sous Chef at Pizza Domenica.
To extend my knowledge of different culinary regions I moved as a line cook to Shaya, where we won the James Beard Award for Best New Restaurant in the country.
I also worked at Restaurant August as a line cook first and then sous chef.
In 2019 I went back to Domenica Restaurant as Executive Sous Chef first, then Chef De Cuisine and from 2020 to 2025 as Executive Chef.
My experience goes from fine dining multiple courses/wine dinner events to casual/family style events.
From me you can have a traditional and unparalleled Italian experience from classic to contemporary dishes, fresh made pasta, pizza and bread but also a little twist from different varieties of cuisine.
