Cooking style
My cooking style in very in the moment. I like to call it improv cooking, you never know what the dinner rush will throw at you. You need to be able to build a dish from what you have in the cooler what ever it my be. To create something from nothing, you need to be dynamic and versatile. Or building a menu for someone who tells you last minute about a food allergic or additional guest. You have to be able to problem solve when something goes awry.
Experience
My experience comes from over 16 years working late nights in greasy grimy kitchens getting cuts & burn in a fast paced involvement. 10 of those years have been in kitchen management. With freedom to create nightly dinner specials, seasonal menu's & staying up on food trends. I have cooked for weddings up to 200 people & made event menu's for any occasion.
