Robbie as he’s known by in culinary circles in Ireland has over 30 years of cooking experience working in fine
dining restaurants, country house hotels and 4 & 5 star hotels.
His culinary journey has seen Robbie cook many styles of cooking from classic French, Asian to new Irish Cuisine, winning many awards during his highly regarded Career, from been awarded chef of the year to international competition successes.
Robbie strives excellence in his food and has a passion for producing food full of flavour, textures and using Irish
produce from farm to Table.

“I’ve been very fortunate to have worked with some of Ireland best chefs and trained using the best ingredients available. Working in such kitchens has brought a great respect for our local ingredients and treating/cooking them with the greatest of respect.
I have a love for cooking wild Irish seafood/ shellfish, also game in season is very special to me as I spent many years working in the beautiful Connemara reign of Galway at the award winning Ballynahinch Castle as Exec Chef from the age of 25 years old.
I’ve also been fortunate to have cooked Stages working in Philip Howard’s ( Square Restaurant) 2 star Michelin London, been Exec Chef at the 5 Star Heritage Killinard Golf Resort, Co Laois, Exec Chef Gibson Hotel Dublin cooking Pan Asian Cuisine to sushi and learning the art Dim sum.
We absolutely loved working with Chef Robbie. He was so personable and responsive. He helped create an incredible menu for our group. We had 8 people at an airbnb with a tiny kitchen and he and Gordan managed to create an amazing experience for us. One person in our group said it was the best meal we had in Ireland, someone else went so far as to say it was the best meal of his life. Every course was delicious. He worked with me leading up to the trip to personalize different aspects of the meal including adding a second appetizer course with seafood to our specifications. It was a treat working with Robbie and I would recommend him to anyone coming to the Galway area. Thank you, Chef Robbie!
